Chef and Production Manager

Marjorie P. Lee Retirement Community, voted as one of the top retirement communities on the east side, is currently seeking a Chef and Production Manager. The Chef and Production Manager, under the direction of the Director of Dining Services, is responsible for the overall operation of the Dining Services Department, including menu planning, ordering and supervision of the Chefs, Cooks as well as all team members in Dining Services.

Essential Functions/Accountabilities:
  • Collaborates with the Dining Services Director in planning, developing, organizing, implementing, evaluating, and directing the Dining Services department, its programs and activities.  Responsible for directing the department in the absence of the Director. 
  • Ensures that a fine dining experience is offered to our residents by overseeing the menu planning and cooking of appetizing meals.     
  • Supervises dining services staff to ensure that team members perform their responsibilities following ERS’s expected behaviors and established policies and procedures at all times.
  • Develops, coordinates, and maintains a good working rapport within the department and with other departments in the facility to assure that department services and activities are completed to meet the needs of the residents. 
  • Oversees food preparation and food service to assure proper procedures are followed at all times.
  • Is responsible for adequate food supplies and equipment etc., are maintained, and monitors cost.   Orders food/supplies and inventories stock.
  • Maintains current records that reflect department expenditures including food costs, inventory, meal counts, etc. 
Minimum Qualifications:
  • Must possess, as a minimum, a high school diploma.
  • Must possess, as a minimum, a culinary degree or equivalent in fine dining /  long term   care cooking experience (7-10 years)
  • Must have, as a minimum, one (1) year dining services experience in a supervisory capacity.
  • Must be Serve Safe certified
  • Must be knowledgeable of dining services procedures relating to retirement facility operations.
  • Must be able to lift up to 50 lbs. on a regular basis.
